Retained as a Turnaround Consultant by an international lender to assess a $250 million, beef slaughter and processing operation, Buccino parlayed a "beef stew" into filet. Armed with a short-term analysis and recognition of a $10 million monthly shortfall, we concluded that the business was not viable. We placed the company in a Chapter 11 setting, operated it in a downsized mode and located a joint-venture partner to re-establish the business as a specialty Black Angus operation.
